Instructions

  1. Heat butter and olive oil: In a large dutch oven or stock pot, heat the butter and olive oil over medium-low heat. Add the minced garlic and stir frequently until fragrant, being careful not to burn it.
  2. Add shredded chicken: Stir in the shredded rotisserie chicken to warm through and combine flavors with the garlic and fat.
  3. Cook gnocchi in liquids: Pour in the low-sodium chicken broth, heavy cream, and add the dried gnocchi. Stir everything to combine and let the gnocchi cook for 3 to 5 minutes or until tender according to package instructions.
  4. Add sun-dried tomatoes and spinach: Mix in the sun-dried tomatoes and fresh spinach. Stir continuously until the spinach is wilted and incorporated throughout the sauce.
