These Cranberry Brie Bites are irresistible bite-sized appetizers featuring flaky crescent dough filled with creamy brie cheese, topped with tangy whole berry cranberry sauce and a hint of fresh rosemary. Perfect for holiday gatherings or any festive occasion, they bake to a beautiful golden brown for a warm, cheesy, and fruity treat that’s both elegant and easy to prepare.

Ingredients

Scale

For the Dough

  • All-purpose flour (for dusting the dough and cutting board)
  • 8 ounce crescent dough sheet (or crescent rolls, seams pinched together)

For the Filling

  • 8 ounce wheel of brie cheese
  • 1 cup whole berry cranberry sauce (not jellied)
  • Fresh rosemary sprig (about 2 sprigs, depending on length)

Instructions

  1. Preheat and prepare muffin tin: Preheat your oven to 375°F (190°C). Lightly spray a 24-count mini muffin tin with cooking spray to prevent sticking.
  2. Prepare dough: Spread a small amount of all-purpose flour onto your counter or cutting board. Roll out the 8-ounce crescent dough sheet; if using crescent rolls, pinch the seams together to form one long sheet to ensure even rolling.
  3. Cut dough squares: Cut the rolled out dough into 24 equal-sized squares, sized to fit neatly into each muffin tin slot.
  4. Place dough in muffin tin: Gently press each dough square into the individual slots of the muffin tin, shaping them to form mini cups.
  5. Add brie cheese: Cut the 8-ounce wheel of brie into small pieces. Place a piece of brie inside each dough cup, ensuring a creamy filling.
  6. Top with cranberry sauce: Spoon a generous dollop of whole berry cranberry sauce on top of the brie in each dough cup for a sweet and tart flavor contrast.
  7. Add rosemary garnish: Place a small piece of fresh rosemary sprig atop each bite for an aromatic herbaceous note.
  8. Bake: Place the muffin tin in the preheated oven and bake for about 15 minutes, or until the crescent dough is lightly golden brown and cooked through.
  9. Serve warm: Remove from the oven and allow to cool slightly before serving warm for the best flavor and texture.

Notes

  • You can use either crescent dough sheets or crescent rolls; just make sure to pinch seams together if using rolls to create a uniform dough sheet.
  • Using whole berry cranberry sauce gives a nice texture contrast compared to jellied sauce.
  • Fresh rosemary adds a wonderful herb flavor, but you can adjust the quantity based on your preference.
  • Serve these bites warm to fully enjoy the melted brie and aromatic rosemary.
  • If you want, you can prepare these ahead and bake just before serving.
