Garlic Soup:

  • 2 whole heads of garlic, peeled
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 tablespoons butter
  • 6 cups chicken or vegetable broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper, to taste

For Serving:

  • 4 egg yolks
  • 1/2 cup grated Parmesan cheese
  • Crusty bread
  • Fresh parsley (optional for garnish)

Instructions

  1. Heat olive oil and butter: In a large pot over medium heat.
  2. Add chopped onion and sauté for 5 minutes, until softened.

  3. Add garlic: Cook peeled garlic cloves for 2–3 minutes, stirring to avoid burning.
  4. Pour in broth: Add broth, thyme, and bay leaves. Bring to a boil, then simmer for 30 minutes.
  5. Season: Remove thyme and bay leaves. Season with salt and pepper.
  6. Prepare egg mixture: Whisk together egg yolks and Parmesan cheese in a bowl.
  7. Temper egg mixture: Slowly whisk in a ladle of hot soup to temper the mixture.
  8. Combine: Gradually whisk the tempered mixture back into the soup. Simmer for another 5 minutes until slightly thickened.
  9. Serve: Hot with crusty bread. Garnish with fresh parsley if desired.
