Creamy and delicious, this Cottage Cheese Pasta Sauce is a simple and healthier alternative to traditional pasta sauces. Made with cottage cheese, Parmesan, and garlic, this sauce is easy to whip up and perfect for a cozy meal.

Main Ingredients:

  • 2 teaspoons Olive Oil (or butter)
  • 1 1/2 cup Cottage Cheese
  • 3/4 cup Skim Milk (or half-half (note 1))
  • 1/2 cup Parmesan Cheese (grated)

Additional Ingredients:

  • 6 Garlic Cloves
  • 1 pinch Black Pepper (to taste)
  • 1 pinch Salt (to taste)
  • 2 tablespoons Cornstarch ((note 2))
  • 4 tablespoons Water
  • 8 ounces Cooked Pasta (spaghetti, fettuccine, or penne)

Instructions

  1. Cook the Pasta: Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Prepare the Sauce: In a blender or food processor, combine cottage cheese, skim milk, and Parmesan. Blend until creamy and smooth. Set aside.
  3. Sauté Garlic: In a saucepan over medium heat, sauté the garlic in olive oil until fragrant, about 30 seconds to 1 minute.
  4. Add Cottage Cheese Mixture: Pour the blended cottage cheese mixture into the saucepan and bring to a gentle simmer. Reduce heat to low.
  5. Thicken the Sauce: In a small bowl, whisk cornstarch with water. Whisk into the warm sauce and cook until thickened.
  6. Combine with Pasta: Stir in the cooked pasta and cook until warm and well coated with the sauce.
  7. Serve: Garnish with parsley and serve over your favorite pasta.
  8. Storage: Store in an airtight container in the fridge for up to 3 days. To reheat, add a splash of water to loosen the sauce. Freeze for up to one month.

Notes

  • The sauce will thin out initially but will thicken upon cooling.
  • Adjust seasoning with salt and pepper as needed.
