A comforting and cheesy Cottage Cheese Pasta Bake that combines tender pasta with flavorful vegetables, creamy cottage cheese, and gooey melted mozzarella. This easy-to-make dish is perfect for a family dinner or potluck.

Pasta:

  • 3 cups penne pasta, dry

Vegetables:

  • 2 Tbsp olive oil
  • 4 large cloves garlic, minced
  • 2 cups broccoli florets
  • 3 cups baby spinach

Cheese and Sauce:

  • 2 cups cottage cheese, 2%MF
  • 2 cups marinara
  • 1 cup shredded mozzarella
  • Salt + pepper, to taste
  • 5 large leaves fresh basil, chopped (to garnish)

Instructions

  1. PREP: Preheat oven to 400F. Bring a large pot of water to a boil. Chop broccoli into florets and mince garlic.
  2. Cook pasta to al dente, drain when finished.
  3. Heat olive oil in a pan, sauté garlic and broccoli for 7 minutes. Add spinach and cook until wilted. Remove from heat.
  4. In a baking dish, combine cooked pasta, vegetables, cottage cheese, and marinara. Season with salt and pepper, then stir to combine.
  5. Sprinkle mozzarella over the top of the pasta.
  6. Bake for 20 minutes at 400F until cheese is melted and browned. Garnish with fresh basil before serving.
