Ingredients

Scale

Pie Crust

  • 1 frozen 9-inch pie crust (I used Wholly Wholesome)

Filling

  • 4 large eggs
  • ¾ cup cottage cheese (I used full-fat Good Culture)
  • ¼ cup milk
  • ¼ teaspoon sea salt
  • ¼ teaspoon pepper
  • 3 slices cooked bacon, chopped
  • 2 scallions, chopped
  • 1 cup shredded cheddar cheese

Instructions

  1. Blind Bake Crust: Preheat your oven as directed on the pie crust package, then blind bake the frozen pie crust according to the package instructions to ensure a crisp, fully cooked base for your quiche.
  2. Preheat Oven: Once the crust is blind baked, preheat your oven to 350°F (175°C) to prepare for baking the quiche filling.
  3. Whisk Filling: In a medium mixing bowl, add the eggs, cottage cheese, milk, sea salt, and pepper. Whisk thoroughly until the mixture is smooth and completely combined, ensuring a creamy custard base.
  4. Combine Ingredients: Stir in the chopped cooked bacon, chopped scallions, and shredded cheddar cheese into the egg mixture, blending all components evenly.
  5. Pour Filling: Carefully pour the combined egg mixture into the pre-baked pie crust, distributing it evenly.
  6. Bake Quiche: Place the quiche in the oven and bake uncovered at 350°F for about 40-45 minutes, or until the filling is set and the edges are golden brown. It is fine if the center jiggles slightly as it will firm up while resting.
  7. Cool and Serve: Remove the quiche from the oven and allow it to rest at room temperature for 10-15 minutes. This resting time helps the quiche fully set. Slice into 6 pieces and serve warm or at room temperature.

Notes

  • Blind baking the pie crust prevents it from becoming soggy when the wet filling is added.
  • If you prefer a vegetarian option, omit the bacon and consider adding sautéed mushrooms or spinach instead.
  • The quiche can be served warm or at room temperature, making it a versatile make-ahead dish.
  • Leftovers can be refrigerated for up to 3 days and reheated gently before serving.
  • Ensure the eggs and cottage cheese are well whisked to achieve a smooth custard texture.
