Coffee Mixture:
- 1 tablespoon instant coffee granules
- ¼ cup water
- ¾ cup caster sugar or white granulated sugar
- ½ teaspoon powdered gelatine
- 1 teaspoon vanilla extract
Whipped Cream:
- 1 ½ cups whipping cream, cold
- Cocoa or chocolate shavings to serve
- Prepare Coffee Mixture: Place water in a saucepan over low heat, sprinkle gelatine, stir until dissolved. Add coffee granules and sugar, stir until sugar dissolves.
- Cool Coffee Mixture: Transfer to a bowl, chill until cool but not set.
- Whip Cream: Beat cold cream to firm peaks.
- Combine: Stir vanilla into coffee syrup, fold in whipped cream gently.
- Chill: Divide into glasses, chill for at least 2 hours.
- Serve: Sprinkle with chocolate shavings or cocoa.
