Coffee Mixture:

  • 1 tablespoon instant coffee granules
  • ¼ cup water
  • ¾ cup caster sugar or white granulated sugar
  • ½ teaspoon powdered gelatine
  • 1 teaspoon vanilla extract

Whipped Cream:

  • 1 ½ cups whipping cream, cold
  • Cocoa or chocolate shavings to serve

Instructions

  1. Prepare Coffee Mixture: Place water in a saucepan over low heat, sprinkle gelatine, stir until dissolved. Add coffee granules and sugar, stir until sugar dissolves.
  2. Cool Coffee Mixture: Transfer to a bowl, chill until cool but not set.
  3. Whip Cream: Beat cold cream to firm peaks.
  4. Combine: Stir vanilla into coffee syrup, fold in whipped cream gently.
  5. Chill: Divide into glasses, chill for at least 2 hours.
  6. Serve: Sprinkle with chocolate shavings or cocoa.

Notes

  • Ensure gelatine is fully dissolved in step 1.
  • Do not overwhip the cream in step 4.
  • Use a folding motion to combine cream and coffee mixture.
