Cheese and Chorizo Mixture

  • 250g grated mozzarella
  • 50g grated parmesan
  • 50g grated or finely sliced chorizo
  • 1 tbsp cornflour
  • 2 tbsp water

Coating

  • 100g plain flour
  • 2 eggs, whisked
  • 200g breadcrumbs
  • 1 tbsp paprika

Instructions

  1. Prepare the cheese and chorizo mixture: In a bowl, combine the grated mozzarella, grated parmesan, minced chorizo, cornflour, and water. Mix thoroughly with a spoon and then knead the mixture with your hands until it forms a dough-like consistency that can be easily molded.
  2. Form the balls: Tear off small portions of the mixture and roll them into balls. You should be able to make around 8 balls. Set these balls aside on a plate.
  3. Coat the balls: Set up three separate plates—one with plain flour, one with the whisked eggs, and one with breadcrumbs mixed with paprika. Roll each cheese and chorizo ball first in the flour, then dip it into the egg mixture, and finally coat it with the paprika-seasoned breadcrumbs. Repeat this coating process two to three times to build a thick, secure crust that will prevent the cheese from oozing during cooking.
  4. Air fry the balls: Preheat your air fryer to 205°C (400°F) for 5 minutes. Place the coated cheese balls gently into the air fryer basket, ensuring they are spaced out. Air fry for about 5 minutes or until crispy and golden brown on the outside.
  5. Serve and enjoy: Carefully remove the cheese balls from the air fryer, let them cool slightly, then serve immediately and enjoy the crispy, cheesy snack.

Notes

  • For a spicier kick, add a pinch of chili powder to the breadcrumb mixture.
  • Use fresh mozzarella for the best melt, but ensure it is well-drained to avoid excess moisture.
  • If you don’t have an air fryer, these can be deep-fried or oven-baked at 200°C for 15-20 minutes, turning halfway.
  • Make sure to coat the balls multiple times to avoid cheese leakage during cooking.
