  • 1/3 cup whole milk (room temperature)
  • 1 egg (room temperature)
  • 1 teaspoon vanilla paste or extract
  • Tangzhong from above
  • 6 tablespoons unsalted butter (softened)
  • 1/2 cup mini chocolate chips

Cookie Dough Filling:

  • 8 tablespoons unsalted butter (room temperature)
  • 1/2 cup light brown sugar (packed)
  • 1/8 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon baking powder
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup mini chocolate chips
  • 4 tablespoons unsalted butter (room temperature)
  • 1 ounce cream cheese (cold)
  • 1 cup powdered sugar
  • 3 tablespoons heavy cream
  • 1 teaspoon vanilla paste or extract

Instructions

  1. Make the Cinnamon Roll Dough – Whisk water and flour in a saucepan. Cook until thickened into a roux. Set aside. Whisk flour, sugar, yeast, and salt in a mixing bowl. Add cream, milk, egg, vanilla, and tangzhong. Knead until smooth. Add butter and knead until elastic. Knead in mini chocolate chips. Let dough rest.
  2. Make the Cookie Dough Filling – Cream butter and sugars. Mix in egg and vanilla. Add flour, salt, and baking powder.
  3. Bake and Fill the Rolls – Roll out dough into a rectangle. Spread cookie dough mixture, sprinkle chocolate chips, roll into strips, and place in a baking pan. Let rise, then bake. Make frosting while rolls bake. Spread frosting on warm rolls before serving.
