Ingredients

Scale

For the Wraps

  • 2 cups cooked chicken (chopped)
  • 4 cups Romaine lettuce (chopped)
  • 1/3 cup shaved Parmesan cheese
  • 1/2 cup cherry tomatoes (halved)
  • 4 large flour tortillas
  • 1/2 cup Caesar dressing

For the Caesar Dressing

  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 2 Tablespoons fresh lemon juice
  • 1 Tablespoon olive oil
  • 1 Tablespoon Dijon mustard
  • 2 teaspoons red wine vinegar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon anchovy paste
  • 1/2 teaspoon fresh black pepper
  • 1 clove garlic (grated)

Instructions

  1. Prepare the Caesar dressing: Combine all the dressing ingredients—plain Greek yogurt, grated Parmesan cheese, fresh lemon juice, olive oil, Dijon mustard, red wine vinegar, Worcestershire sauce, anchovy paste, black pepper, and grated garlic—in a food processor or blender. Process until smooth and creamy.
  2. Toss the salad mixture: In a large bowl, combine the chopped Romaine lettuce, cooked chopped chicken, shaved Parmesan cheese, and halved cherry tomatoes. Toss them together gently to mix evenly.
  3. Add the dressing: Pour the prepared Caesar dressing over the salad mixture. Toss again until all ingredients are well coated with the dressing for balanced flavor distribution.
  4. Assemble the wraps: Lay out the flour tortillas. Divide the dressed salad mixture evenly among the tortillas. Fold in the sides and roll each tortilla tightly like a burrito to enclose the filling securely.
  5. Serve or store: Cut the wraps in half diagonally. Serve immediately for best freshness, or store properly wrapped in the refrigerator if preparing ahead.

Notes

  • For a lighter version, use whole wheat or low-carb tortillas.
  • Can be served cold or at room temperature; no additional heating required.
  • Anchovy paste adds authentic Caesar flavor but can be omitted for a milder taste.
  • Store leftovers tightly wrapped in the refrigerator and consume within 1-2 days for optimal freshness.
  • To make this recipe gluten-free, substitute flour tortillas with gluten-free wraps or lettuce leaves.
