Cheesy Corn Fritters are a delightful snack or side dish that perfectly combines the sweetness of fresh corn with the savory richness of Parmigiano Reggiano. Crispy on the outside and tender on the inside, these fritters are sure to please.

Corn Fritters:

  • 2 large ears corn (375 grams corn kernels)
  • 90 grams cake flour (about 3/4 cup)
  • 1/2 teaspoon salt
  • 50 grams Parmigiano Reggiano (grated)
  • 4 tablespoons water (add more if needed)
  • 2 tablespoons vegetable oil (plus more for additional batches)

Instructions

  1. Cut corn. Cut the kernels off 2 large ears corn into a bowl using a paring knife.
  2. Mix dry ingredients with corn. Add cake flour, salt, and Parmigiano Reggiano to the corn, mix together.
  3. Add water and mix. Stir in water until mixture sticks together like chunky cream cheese.
  4. Add oil to pan and form fritters. Shape batter into compact balls and fry in oil.
  5. Fry fritters. Flatten and fry until golden brown on both sides.
  6. Repeat with remaining batter. Fry in batches with more oil as needed.
