A delicious, comforting Cheesy Chicken Melt sandwich featuring juicy cooked chicken breast mixed with crisp celery and tangy mayo-mustard dressing, layered with melty Colby Jack cheese and fresh tomato slices, grilled to golden perfection on buttery sourdough bread.

Ingredients

Scale

Chicken Salad Mixture

  • 2 large boneless skinless chicken breasts, cooked and chopped
  • 1 stalk celery, diced fine
  • ¼ cup mayonnaise
  • ½ tablespoon Dijon mustard
  • 1 teaspoon sweet relish
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Sandwich Assembly

  • 4 slices Colby Jack cheese
  • 2 tomato slices, thinly sliced
  • 4 slices sourdough bread
  • 2 tablespoons salted butter, softened

Instructions

  1. Prepare the chicken salad mixture: In a large bowl, combine the chopped cooked chicken breast, finely diced celery, mayonnaise, Dijon mustard, sweet relish, salt, and pepper. Mix thoroughly until all ingredients are well incorporated to create a flavorful chicken filling.
  2. Preheat the skillet: Place a large, heavy bottom skillet over medium heat and allow it to preheat properly to ensure even cooking and a crispy toasted bread exterior.
  3. Assemble the sandwiches: On a clean cutting board, lay out 2 slices of sourdough bread side by side. On each slice, stack 2 slices of Colby Jack cheese followed by a thin slice of tomato and half of the prepared chicken mixture. Top each with a second slice of bread, completing the sandwich.
  4. Butter the bread and start grilling: Spread softened salted butter evenly over the outside surfaces of the sandwich bread on both sides. Place the sandwiches into the hot skillet, butter side down, and cook for about 4 minutes or until the bread is browned and toasted.
  5. Flip and finish cooking: Carefully flip the sandwiches to the other buttered side. Press down gently with a flat spatula to ensure good contact with the skillet. Continue cooking for approximately 4 minutes, until the second side is golden brown and crisp and the cheese inside has melted completely.
  6. Serve warm: Remove sandwiches from the skillet and serve immediately for the best melt-in-your-mouth experience.

Notes

  • For softer bread, you may cover the skillet while cooking to help melt the cheese faster.
  • If desired, substitute Colby Jack with cheddar or mozzarella.
  • To reduce sodium, use low-sodium mayonnaise and butter.
  • Leftover grilled sandwiches can be reheated in a skillet or toaster oven for best texture.
