Instructions

  1. Brown the beef: Add 1 pound ground beef to a medium skillet or cast iron pan and cook over medium heat until cooked through with no pink remaining. Drain fat leaving 1 tablespoon in the pan, then remove beef from the pan.
  2. Cook the onions: Add ½ cup diced onion to the remaining beef fat in the pan. Cook for 3-4 minutes over medium heat until onions are tender and translucent.
  3. Combine ingredients: Return the cooked beef to the pan with the onions. Add 1 (14.5-ounce) can petite diced tomatoes and 4 teaspoons dill relish. Stir to combine and cook for about 2 minutes until heated through.
  4. Melt the cheeses: Add ½ pound Velveeta cheese and 4 ounces cream cheese (both cut into cubes) to the pan. Stir continuously over medium heat until all cheese is completely melted and the mixture is smooth.
  5. Season: Taste the dip and season with salt and ground black pepper as needed.
  6. Serve: Transfer the dip to a serving dish. Top with shredded lettuce, caramelized grilled onions, and diced cherry tomatoes. Serve warm with crackers or bread for dipping.
