  • 1 pound ground beef

  • 2 dill pickles (finely chopped)

Dough and Toppings

  • 1 cup freshly shredded cheddar cheese
  • 2 tablespoons unsalted butter (melted)

  • Yellow mustard (optional, for dipping)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Cook the Bacon: In a large skillet over medium heat, cook the bacon slices until they are crisp. Once cooked, remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pan for added flavor.
  3. Sauté Beef and Onion: Add the ground beef and chopped onion to the skillet. Cook over medium heat, breaking up the beef with a spoon, until the beef is fully cooked and the onion is translucent, about 7-10 minutes.
  4. Add Garlic: Stir in the minced garlic and cook for about 1 minute until fragrant. Drain off any excess grease from the skillet.
  5. Combine Filling Ingredients: Remove the skillet from heat. Stir in the ketchup, Worcestershire sauce, finely chopped dill pickles, and the cooked crispy bacon pieces, mixing well to combine all flavors.
  6. Prepare Biscuit Dough: While the beef mixture cooks, roll each biscuit dough piece out on a flat surface until it is approximately ¼ inch thick, creating a flat circle for wrapping.
  7. Assemble Bombs: Divide the beef filling evenly among the biscuits. Add some shredded cheddar cheese on top of the filling. Pinch the corners of each biscuit together to enclose the filling fully, forming a compact ball. Place each seam side down on the prepared baking sheet.
  8. Brush and Top: Brush the outside of each biscuit ball with melted unsalted butter and sprinkle with sesame seeds if desired to add extra flavor and texture.
  9. Bake: Bake the assembled cheeseburger bombs in the preheated oven for about 20 minutes or until the biscuits are golden brown and cooked through.
