Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 300°F (150°C) and line a baking pan with parchment paper to prevent sticking and ease cleanup.
  2. Mix dry ingredients: In a large mixing bowl, combine the oats, chopped almonds, chopped pecans or walnuts, cinnamon, ginger, cardamom, and allspice. Stir until all the dry ingredients are evenly mixed.
  3. Melt and combine wet ingredients: In a microwave-safe bowl, melt the coconut oil by microwaving for about 30 seconds. Add the honey (or maple syrup) and vanilla extract to the melted coconut oil and stir well. Microwave the mixture again for about 20-30 seconds until bubbly, then whisk thoroughly to ensure all ingredients are fully combined.
  4. Combine wet and dry mixtures: Pour the wet ingredient mixture over the dry ingredients. Stir well until all the dry ingredients are evenly coated with the wet mixture.
  5. Spread and bake: Spread the granola mixture into a thin, even layer on the prepared baking pan. Bake in the oven for 25-30 minutes, stirring halfway through for even toasting if desired.
  6. Cool and break into chunks: Remove the granola from the oven. It will still be soft at this stage. Let it cool completely on the pan for about 30 minutes, allowing it to harden into crunchier chunks. Once cool, break the granola into your preferred sizes.
  7. Serve and enjoy: Enjoy your chai-spiced granola as a snack, with milk, or topped on yogurt for a flavorful and healthy treat.
