This Cattle Ring Dip is a flavorful layered appetizer that combines creamy cheese, crisp chips, and zesty salsa in a visually striking ring shape. Made with cream cheese, sour cream, shredded pepper jack, and fresh vegetables seasoned with taco spices and encased in a crunchy fritos and corn nuts crust, it’s a perfect party dip served chilled and ready to share with chips or veggie sticks.

Ingredients

Scale

Dip Base

  • 2 (8 oz) blocks cream cheese, softened
  • 1/2 cup sour cream
  • 1 1/2 cups shredded pepper jack cheese
  • 3 green onions, chopped
  • 1/2 red bell pepper, finely diced
  • 1 packet taco seasoning, divided

Crust

  • 1 cup fritos, lightly crushed
  • 1/2 cup corn nuts

Filling

  • 3/4 cup chunky salsa, for filling

Instructions

  1. Prepare Bundt Pan: Line an 8-cup bundt pan fully inside with plastic wrap, allowing the wrap to hang over the edges for easy removal later.
  2. Make Cheese Mixture: In a medium bowl, combine softened cream cheese, sour cream, shredded pepper jack, chopped green onions, diced red bell pepper, and half of the taco seasoning. Mix thoroughly until smooth and well incorporated.
  3. Create Chip Crust: In a small bowl, mix lightly crushed fritos, corn nuts, and the remaining half of the taco seasoning. Spread this mixture evenly in the bottom of the lined bundt pan.
  4. Assemble the Dip: Spoon the cheese mixture carefully over the chip crust in the bundt pan. Press gently to pack it down evenly and firmly.
  5. Chill: Cover the pan with the overhanging plastic wrap and refrigerate for at least 2 hours to allow the dip to set and flavors to meld.
  6. Unmold the Dip: When ready to serve, peel off the top plastic wrap. Invert the bundt pan onto a serving platter, then lift the pan and remove the plastic wrap liner to reveal the ring-shaped dip.
  7. Add Salsa and Serve: Spoon chunky salsa into the center hole of the cheese ring. Serve immediately with tortilla chips, corn chips, or fresh veggie sticks for dipping.

Notes

  • For best results, ensure the cream cheese is softened to room temperature to achieve a smooth cheese mixture.
  • If you prefer a spicier dip, add extra taco seasoning or a dash of hot sauce to the cheese mixture.
  • Substitute corn nuts with another crunchy snack if desired, such as crushed tortilla chips or pretzels.
  • Chilling the dip overnight can enhance the flavor even more.
  • Use freshly chopped vegetables to add color and crunch to the dip.
