Main Dish:

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1/2 medium onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes
  • 1/2 tablespoon Cajun seasoning
  • 1 cup uncooked orzo pasta
  • 2 cups low sodium chicken broth
  • 1 teaspoon lemon juice
  • 1 cup heavy/whipping cream
  • 2 cups cooked shredded/rotisserie chicken
  • 1/2 cup freshly grated parmesan cheese

Instructions

  1. Sauté Onion: Heat oil and butter in a pot. Sauté onion for 3-4 minutes.
  2. Add Ingredients: Add garlic, sun-dried tomatoes, Cajun seasoning, and orzo. Cook for 2-3 minutes.
  3. Cook Orzo: Pour in chicken broth, lemon juice, and cream. Cook uncovered for 10 minutes, stirring often.
  4. Finish Dish: Stir in chicken and parmesan. Cover and let thicken for 3-5 minutes off the heat.

Notes

  • Adjust Cajun seasoning to taste for more or less heat.
  • For a lighter version, use half-and-half instead of heavy cream.
