Buster Bars are a delightful frozen treat that combines creamy yogurt or ice cream with peanut butter, all coated in rich chocolate. Easy to make and perfect for a sweet indulgence.

For the Bars:

  • 1 cup yogurt (vanilla ice cream or vegan yogurt work too)
  • 1/4 cup peanut butter or allergy-friendly substitute
  • 2 tbsp sweetener of choice if using unsweetened yogurt

For the Chocolate Coating:

  • 1 cup chocolate chips
  • 2 tbsp peanuts (optional)
  • 2 tsp coconut oil (optional)

Instructions

  1. Prepare the Bars: In a bowl, whip together the yogurt, peanut butter, and optional sweetener until smooth. Add mini chocolate chips if desired. Drop spoonfuls of the mixture onto a parchment-lined tray. Insert a popsicle stick or small spoon into each and flatten.
  2. Freeze: If using, sprinkle chopped peanuts on top of each bar. Freeze until firm.
  3. Make the Chocolate Coating: Melt the chocolate chips carefully. Stir in coconut oil for a smoother texture.
  4. Coat the Bars: Dip each frozen bar into the melted chocolate to coat. Return to the freezer to set the chocolate shell.

Notes

  • You can customize these bars by adding chopped nuts or dried fruits to the mixture.
  • For a quicker version, use store-bought chocolate sauce instead of making your own coating.
