Egg Mixture
- 4 large eggs
- 4 oz breakfast sausage (bacon, ham, or any other breakfast meat)
- ½ cup shredded cheddar cheese
- 2 teaspoons olive oil
- Cook the breakfast meat: In a skillet, cook sausage or other breakfast meat over medium heat until browned. If using sausage, break it into small pieces during cooking; if using ham, dice it; if using bacon, crumble it as it cooks.
- Whisk the eggs: Crack the eggs into a bowl and whisk thoroughly until the yolks and whites are fully combined.
- Cook the eggs: After the meat is cooked, pour the eggs into the same pan. Cook over medium heat, stirring frequently to scramble, until the eggs are mostly cooked but still moist. Return the cooked meat to the pan and mix it evenly into the eggs. Remove the pan from heat.
- Assemble the quesadilla: Lay the tortillas flat. On half of each tortilla, spread a thin layer of shredded cheddar cheese, then add half of the egg and meat mixture, and top with the remaining cheese. Fold the tortilla in half to create a half-moon shape.
