  1. Cook the Sausage: In a non-stick skillet, cook the ground breakfast sausage over medium heat until no longer pink. Drain excess grease by transferring the cooked sausage to a paper towel-lined bowl and set aside.
  2. Scramble the Eggs: Using the same skillet, melt 2 tablespoons of butter over medium-high heat. Pour in the beaten eggs and gently scramble until just set but still moist. Remove the skillet from heat.
  3. Combine Egg and Sausage: In a bowl, combine the scrambled eggs and cooked sausage mixture, mixing them evenly.
  4. Assemble the Sandwiches: Butter one side of each slice of sourdough bread. Place one slice butter-side down in the skillet, top with one slice of Colby-Jack cheese, then a generous scoop of the egg-sausage mixture, another slice of cheese, and finally a second slice of sourdough bread butter-side up.
  5. Grill the Sandwich: Cook the assembled sandwich on medium heat until the bread is golden brown and the cheese is melted, roughly 3 to 4 minutes per side. Flip carefully to avoid spilling the filling.
