Bourbon Caramel Sauce:

  • 1 C Granulated Sugar
  • 1/4 C Water
  • 2 TBSP Light Corn Syrup
  • 1/2 C Heavy Cream, at room temperature
  • 2 TBSP Salted Butter
  • 2 TBSP Bourbon Whiskey

Ice Cream Base:

  • 1 14 oz Can Sweetened Condensed Milk
  • 1/2 C Roasted Peach Puree
  • 2 tsp Vanilla Extract
  • 2 C Heavy Cream, cold
  • 1/2 C Bourbon Caramel Sauce
  • 1/2 C Candied Pecans (optional)

Instructions

  1. Roast the Peaches: Preheat the oven to 400°F. Toss sliced peaches with honey and roast on a lined sheet pan until soft and browned.
  2. Make the Roasted Peach Puree: Puree roasted peaches in a food processor, then strain and set aside.
  3. Prepare Bourbon Caramel Sauce: Cook sugar, water, and corn syrup until amber. Stir in cream, butter, and bourbon. Cool.
  4. Combine Ice Cream Base: Mix condensed milk, peach puree, and vanilla. Whip cold cream to stiff peaks and fold into the condensed milk mixture.
  5. Layer and Freeze: Layer ice cream and caramel sauce in a dish, repeating the layers. Freeze for at least 6 hours.
