These Blueberry Yogurt Popsicles are a refreshing and healthy treat perfect for hot days. Made with fresh blueberries, creamy Greek yogurt, a touch of honey, and a hint of lemon, they combine fruity sweetness with a creamy texture. Blueberry Mixture

  • 2 cups blueberries
  • 5 tablespoons water
  • ¼ cup + 2 tablespoons sugar

Yogurt Mixture

  • 2 cups Greek yogurt
  • ¼ cup honey
  • 1 lemon (zested and juiced)
  • 2 tablespoons water

Instructions

  1. Cook Blueberries: In a small saucepan, combine the blueberries, 5 tablespoons of water, and the sugar. Heat over medium heat for 3-5 minutes until the berries burst and the sugar dissolves, creating a saucy blueberry mixture.
  2. Cool Mixture: Remove the saucepan from heat and set the blueberry mixture aside to cool down to room temperature.
  3. Prepare Yogurt Mix: In a medium bowl, combine the Greek yogurt, honey, lemon zest, lemon juice, and the remaining 2 tablespoons of water. Mix thoroughly until well combined.
  4. Layer & Swirl: Alternate spooning layers of the yogurt mixture and blueberry mixture into popsicle molds. Use a chopstick to gently swirl the mixtures inside each mold to create a marbled effect.
  5. Freeze: Insert the popsicle sticks as per manufacturer instructions and place the molds in the freezer. Freeze for 4 to 8 hours, or until completely solid.
  6. Remove Popsicles: To remove, fill a container larger than the mold with warm water up to halfway the height of the popsicle molds. Submerge molds for 10-20 seconds, then carefully pull out each popsicle.
  7. Store: To keep for later, individually wrap each popsicle in cellophane bags or parchment paper and store back in the freezer.

  • Use fresh or frozen blueberries depending on availability.
  • Adjust sugar amount according to sweetness preference or substitute with natural sweeteners.
  • For a vegan version, substitute Greek yogurt with plant-based yogurt and honey with maple syrup.
