This Blooming Quesadilla Ring is a fun and delicious appetizer featuring shredded chicken, cream cheese, and a blend of cheddar and Monterey Jack cheeses, all wrapped in crispy flour tortillas arranged into a festive ring. Perfect for sharing, it’s baked until golden and melty, served with ranch dressing for dipping.

Chicken Filling

  • 4 cups shredded cooked chicken
  • 4 oz. cream cheese, softened
  • 1/4 cup Buffalo sauce
  • 3 scallions, thinly sliced
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Cheese Mixture

  • 3 cups shredded cheddar cheese (about 8 oz.)
  • 3 cups shredded Monterey Jack cheese (about 8 oz.)

Other

  • 24 small flour tortillas
  • Ranch dressing, for serving

Instructions

  1. Prepare the chicken filling: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a large bowl, mix together the shredded cooked chicken, softened cream cheese, Buffalo sauce, and thinly sliced scallions. Season the mixture with kosher salt and freshly ground black pepper to taste, combining everything thoroughly.
  2. Assemble the tortilla cones: In a medium bowl, mix the shredded cheddar and Monterey Jack cheeses. Cut each tortilla in half. On one half, sprinkle about 1 tablespoon of the cheese mixture, then place about 1 tablespoon of the chicken mixture in the center. Beginning at the cut edge, fold the bottom quarter of the tortilla into a triangle shape and continue to roll it into a cone. Repeat this process with the remaining tortilla halves, cheese, and chicken mixtures, reserving some cheese for topping.
  3. Form the quesadilla ring: Place a 3-inch-wide cup or bowl in the center of your prepared baking sheet. Arrange the smaller, pointed end of each rolled tortilla cone against the cup, forming a ring shape around it. Sprinkle some of the reserved cheese mixture over the first layer of tortillas. Continue layering and sprinkling cheese two more times to build up the ring. Once finished, carefully remove the cup from the center of the ring.
  4. Bake the quesadilla ring: Bake in the preheated oven until the cheese is melted and the filling is heated through, about 20 to 25 minutes, until tortillas are golden and crisp.
  5. Serve: Pour ranch dressing into a small 3-inch ramekin and place it in the center of the quesadilla ring for dipping. Serve warm and enjoy!

  • You can substitute buffalo sauce with your favorite hot sauce or leave it out for a milder flavor.
