Bacon and Bread

  • 4 oz. bacon (about 4 strips), cut into 1/2″-thick pieces
  • 4 slices white sandwich bread

Mayonnaise Seasoning

  • 1/2 cup mayonnaise
  • 1/2 tsp. kosher salt, plus more to taste
  • 1/4 tsp. freshly ground black pepper, plus more to taste

Instructions

  1. Cook the Bacon: Place a rack in the center of the oven and preheat to 400°F. Arrange the bacon pieces in a single layer in a cold, large metal pan. Cook over medium heat without stirring for about 5 minutes until browned on the bottom. Stir and continue cooking, stirring occasionally for another 1 to 2 minutes until the bacon is crispy. Transfer bacon to a plate and reserve the bacon fat in the pan.
  2. Prepare the Bread: While the bacon cooks, use a serrated knife to trim the crusts from the bread slices. Cut each slice into 4 equal triangles to create toast points for easier serving and bite-sized portions.
  3. Coat Bread with Bacon Grease: Working one triangle at a time, dip one side of each bread triangle into the reserved bacon grease from the pan, coating it thoroughly. Place the triangles on a sheet pan with the bacon grease side facing up to enhance flavor and help crispness.
  4. Bake the Toasts: Bake the bread triangles in the preheated oven for 4 to 5 minutes until the edges are crisp and lightly golden brown, providing a crunchy base for the toppings.
  5. Prepare Toppings: In a small bowl, mix mayonnaise with 1/2 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper for seasoned mayo. Slice romaine lettuce leaves lengthwise through the rib and tear into 2″ pieces, lengthwise matching the bread triangles. Slice grape tomatoes into 1/4″ thick slices and season generously with salt. Slice avocado lengthwise into 1/4″ thick strips.
  6. Assemble the BLAT Toasts: Spread about 1 teaspoon of the seasoned mayonnaise on each toasted bread triangle.
