For the Salad

  • 1 lb Ground beef
  • 1 tsp Sea salt
  • 1/4 tsp Black pepper

  • 3/4 cup Cheddar cheese (shredded)
  • 1/2 cup Pickles (diced)

For the Dressing

  • 1/2 cup Mayonnaise
  • 2 tbsp Pickles (diced)
  • 2 tsp Mustard
  • 1 tsp White vinegar
  • 1/2 tsp Smoked paprika
  • 1 1/2 tbsp Besti Powdered Monk Fruit Allulose Blend (or preferred sweetener)

Instructions

  1. Cook the Ground Beef: Add the ground beef to a large skillet over medium-high heat. You can add a little oil if needed. Break apart with a spatula and season with sea salt and black pepper. Cook for 8-10 minutes, stirring occasionally, until the beef is browned and the moisture has evaporated.
  2. Prepare the Dressing: Meanwhile, combine all the dressing ingredients—mayonnaise, diced pickles, mustard, white vinegar, smoked paprika, and powdered sweetener—in a blender. Puree until smooth. If the dressing is thicker than you prefer, thin it out with a splash of water or oil and blend again. Taste and adjust sweetness if necessary. Refrigerate until ready to serve.
  3. Assemble the Salad: In a large bowl, combine chopped romaine lettuce, chopped tomatoes, shredded cheddar cheese, and diced pickles.
  4. Add the Ground Beef and Dressing: Add the cooked ground beef to the salad bowl. Drizzle the prepared dressing over everything, then toss thoroughly to coat all ingredients evenly.
