Banana Peanut Butter Oat Bars:

  • 3 ripe bananas (1 ½ cups mashed)
  • ⅔ cup creamy peanut butter
  • 3 Tbsp pure maple syrup
  • 1 tsp pure vanilla extract (optional)
  • 2 cups rolled oats
  • ¼ tsp sea salt
  • 1 tsp ground cinnamon (optional)
  • 1 cup chocolate chips (optional*)

Instructions

  1. Preheat the oven: Preheat the oven to 350 degrees Fahrenheit and line a 8” x 8” baking pan with parchment paper.
  2. Mash the bananas: Mash the ripe bananas in a large mixing bowl until creamy. Stir in the peanut butter, maple syrup, and vanilla extract.
  3. Mix the ingredients: Transfer the oats, sea salt, and cinnamon to the bowl with the wet ingredients and stir until a thick dough forms. Optionally, add chocolate chips and mix well.
  4. Spread the mixture: Spread the mixture into the prepared baking pan and even it out. Add extra chocolate chips on top if desired.
  5. Bake: Bake in the preheated oven for 20-25 minutes until golden brown and firm to the touch.
  6. Cool and serve: Allow the bars to cool before slicing and serving.
