Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 350 degrees F and line an 8×8 square baking dish with parchment paper to prevent sticking. Set this aside while you prepare the yogurt mixture.
  2. Mix Wet Ingredients: In a large bowl, combine the Greek yogurt, eggs, maple syrup, and vanilla extract. Whisk these ingredients together until the mixture is smooth and well blended.
  3. Add Cornstarch and Berries: Sprinkle in the cornstarch and continue whisking until fully incorporated. Then fold in 1 cup of the berries gently to keep their shape intact.
  4. Assemble in Baking Dish: Pour the yogurt mixture into the prepared baking dish and evenly distribute it. Sprinkle the remaining 1/2 cup of berries on top for garnish and added flavor.
  5. Bake the Yogurt: Place the dish in the oven and bake for approximately 45 minutes or until the center of the yogurt is set and no longer jiggles when gently shaken.
  6. Cool and Serve: Remove the baked yogurt from the oven and let it cool almost completely. Once cooled, cut into 9 slices and serve plain or with extra maple syrup if desired.
