These Baked Pumpkin Fritter Bites are a delightful fall treat with warm spices and a sweet glaze. Easy to make and perfect for sharing!

Ingredients

Dry Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt

Wet Ingredients:

  • 6 tablespoons unsalted butter, melted & slightly cooled
  • 1 teaspoon vanilla
  • 1 large egg
  • 1 (15 ounce) can pure pumpkin

Glaze:

  • 2 cups powdered sugar
  • 1/3 cup milk

Instructions

  1. Preheat oven and prepare pans: Preheat oven to 350°F. Grease mini muffin pans and set aside.
  2. Mix dry and wet ingredients: Combine dry ingredients. Whisk wet ingredients and add to dry mixture. Stir in pumpkin.
  3. Bake the fritters: Scoop batter into muffin cups and bake for about 15 minutes. Cool slightly on a baking sheet.
  4. Prepare glaze: Whisk powdered sugar and milk until smooth.
  5. Glaze the fritters: Dip fritters in glaze, broil for 3-5 minutes until caramelized. Brush with remaining glaze.

Notes

  • For a richer flavor, you can add chopped nuts or raisins to the batter.
  • These fritters are best enjoyed warm.
