Spicy Tahini Dip

  • 1/2 cup tahini
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon maple syrup
  • 1 clove garlic
  • 1 small jalapeño, seeds removed
  • 1/2 teaspoon kosher salt
  • 3 tablespoons water (to adjust consistency)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Set your oven to 425°F (220°C) and line a baking sheet with parchment paper to ensure the falafel bites bake evenly and do not stick.
  2. Process Falafel Ingredients: In a food processor, pulse pistachios, mint, cilantro, dill, and parsley until they are finely ground. Add chickpeas, garlic, onion, olive oil, lemon zest, flour, baking soda, salt, coriander, and cumin. Pulse until the mixture is coarsely ground and evenly combined, pausing to scrape down the sides as needed.
  3. Form and Bake Falafel Bites: Using your hands, shape the mixture into about 20 small balls. Place them evenly spaced on the prepared baking sheet. Bake in the preheated oven for 15 to 18 minutes, or until the bottoms are lightly browned and the falafel bites are cooked through.
  4. Prepare Spicy Tahini Dip: While the falafel is baking, combine tahini, lemon juice, maple syrup, garlic, jalapeño, and salt in a blender. Blend the mixture, gradually adding water one tablespoon at a time until the sauce is smooth and reaches your desired consistency.
