Crisp Topping

  • 2/3 cup all-purpose flour
  • 3/4 cup old fashioned oats
  • 1/2 cup brown sugar
  • 1/2 cup chopped pecan pieces
  • 1/4 teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon freshly grated nutmeg
  • 8 tablespoons (1 stick, 4 oz) salted butter, divided

Apple Pear Filling

  • 2 large honey crisp apples, peeled and sliced
  • 3 ripe, but firm, Bartlett pears, peeled and sliced
  • 1/2 cup brown sugar
  • 3 tablespoons pure maple syrup
  • 1 teaspoon vanilla bean paste, or vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1 1/2 tablespoons cornstarch
  • 1/4 teaspoon fine sea salt

Instructions

  1. Crisp Topping: Melt 6 tablespoons of butter in a small dish in the microwave and then cool slightly. Dice the other 2 tablespoons into small pieces. In a small mixing bowl, combine flour, oats, sugar, pecans, spices, and salt. Drizzle in the melted butter and mix with a fork until clumps form. Transfer the crisp topping to the fridge while you make the filling.
  2. Apple Pear Filling: Preheat the oven to 350°F. Lightly butter or grease a 2 qt baking dish. In a large mixing bowl, mix the apples and pears with sugar, maple syrup, salt, vanilla, cinnamon, and cornstarch. Toss until well combined. Spread the filling into the prepared baking dish and top with the chilled crisp topping. Dot the top with the remaining diced butter. Bake for 50-60 minutes until golden brown and bubbly. Let it rest for 20 minutes before serving.
