Eggs
Yolk Filling
- 2 tbsp. mayonnaise
- 2 1/2 tsp. sweet pickle relish
- 1 1/2 tsp. Dijon mustard, divided
- 1 1/2 tsp. yellow mustard, divided
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Breading
- 1/2 cup (60 g) all-purpose flour
- 1/2 cup finely ground Ritz cracker crumbs (from 15 to 20 crackers)
- 1/2 cup panko bread crumbs
- 1/4 tsp. garlic powder
- 1/2 tsp. dried parsley flakes
- Pinch of cayenne pepper (optional)
- 3/4 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
Other
- Olive oil or other neutral cooking spray
- Ground paprika, for dusting
- Fresh dill, for serving
- Cook the eggs: Place 6 eggs in an air fryer basket and cook at 250°F for 17 minutes. Immediately transfer them to an ice bath to cool, then peel the eggs carefully.
- Prepare the filling: Slice the eggs in half lengthwise, scoop out the yolks into a medium bowl, and set the egg whites aside. To the yolks, add mayonnaise, pickle relish, 1 tsp Dijon mustard, and 1 tsp yellow mustard. Mash and mix until smooth and creamy. Season with salt and freshly ground black pepper. Transfer the mixture to a piping bag or zip-top bag and refrigerate until ready to use.
- Mix the breading components: Pour flour into a shallow bowl. In another bowl, beat remaining 2 eggs with 1/2 tsp Dijon mustard, 1/2 tsp yellow mustard, and a pinch of salt and pepper. In a third bowl, combine finely ground Ritz cracker crumbs, panko bread crumbs, garlic powder, dried parsley, optional cayenne, 3/4 tsp salt, and 1/4 tsp pepper.
- Bread the egg whites: Dip each egg white half first into flour, then into the egg mixture letting excess drip off, then into the breadcrumb mixture, pressing gently to adhere the coating evenly. Arrange breaded eggs on a baking sheet and spray both sides with cooking spray.
- Air fry the coated eggs: Place the eggs in the air fryer basket without overcrowding. Cook at 390°F, turning halfway through, for 8 to 10 minutes until golden and crisp. Let cool slightly before handling.
- Assemble the deviled eggs: Arrange the crispy egg whites on a serving platter. Pipe the yolk mixture into the cavities of the egg whites. Dust with ground paprika and garnish with fresh dill before serving.
Notes
- Use a light cooking spray to ensure a crispy coating without excess oil.
- Allow the eggs to cool completely before peeling to avoid tearing the whites.
- The piping bag can be fitted with any small tip or simply snipped at the corner for ease of filling.
- Adjust cayenne pepper to your spice preference or omit for a milder flavor.
- These deviled eggs are best served fresh but can be refrigerated for up to 1 day.
