  • 3 tablespoons coconut oil, melted

Instructions

  1. Combine Ingredients: In a large bowl, mix together the old-fashioned oats, chopped raw walnuts, honey, melted coconut oil, ground cinnamon, kosher salt, and 3/4 cup of the chopped roasted pistachios until well combined.
  2. Prepare Air Fryer Basket: Line the air fryer basket with a small piece of parchment paper, making sure to leave some vent holes exposed for proper air circulation. Alternatively, an air fryer basket liner can be used.
  3. Air Fry the Granola: Spread the oat mixture in a single layer in the lined air fryer basket. Cook at 325°F, stirring halfway through the cooking time, until the granola turns a deep golden brown and becomes fragrant, approximately 15 to 18 minutes.
  4. Add Remaining Nuts and Cool: Remove the granola from the air fryer and stir in the remaining 1/4 cup chopped roasted pistachios. Allow it to cool in the air fryer basket for 15 to 20 minutes; the granola will harden as it cools.
  5. Store: Break the granola into small pieces and transfer to an airtight container. Store at room temperature for up to 2 weeks.
