Egg Mixture:

  • 8 large eggs
  • 1 cup cottage cheese (0% to 2% fat recommended)
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • ¼ tsp onion powder

Optional Mix-Ins:

  • Chopped fresh spinach
  • Diced bell peppers
  • Broccoli florets (steamed)
  • Cooked sausage or diced ham

Additional:

  • ½ cup shredded cheese (cheddar, feta, or your favorite)

Instructions

  1. Preheat & Prepare – Preheat oven to 350°F (175°C). Grease a 12-cup silicone muffin tray or line a metal muffin tin with parchment liners.
  2. Blend the Base – In a blender, combine eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend until smooth and frothy, about 20–30 seconds.
  3. Fill the Muffin Cups – Pour about ¼ cup of the egg mixture into each muffin cavity.
  4. Add Mix-Ins & Cheese – Sprinkle mix-ins and shredded cheese evenly into each cup. Gently stir to distribute the add-ins. Top with more cheese if desired.
  5. Bake to Perfection – Bake for 18–22 minutes until centers are set and slightly puffed. Let cool for 5 minutes before removing from the tray.
